How often do they make new champions?

At one point it was once every 2-3 weeks. That's when you saw a lot of champions with problems, because stuff was just getting shoved through the pipeline without a lot of testing (problems were either straight up balance, like Vayne, kit issues like Darius, or both, like Rumble). Now it's at like once ever 2.5 or so months.

Also, looking at what LoLWiki has for future champs, I'm surprised Riot hasn't given us more leakage for future champs. The timing should be pretty soon for them to start trolling us about their next release (the Jinx trolling is still my personal fav)

You can also get some limited skins via Mystery Gifting. That's how I have Silent Night Sona.

What is mystery gifting?

it's where someone buys you or you buy someone else a mystery skin for a random champion they own. They get you to do it by having skins that you can't buy be available, so you get your friend snow bunny nidalee this way and they get you assassin master yi or something equivalently shitty

They periodically have a promotion where you can mystery gift to yourself, too.

You pay 490 riot points for a random skin that costs 520 or more.

Mid is the lane with the greatest chances of you getting insta-bursted by people, so it's the most reliant on memorizing cooldowns / ranges on abilities to be able to kite in and out of harass / dodge important abilities / etc while getting your shit off.

Past that I can't really help you without like... doing hands on stuff or getting more specific questions

Also you need to ward a lot and stay safe from burst.
